  • 3 large eggs, separated
  • 3 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons almond flour
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon melted butter, for brushing tops

Instructions

  1. Preheat the oven to 300°F. Lightly grease a small baking pan or line a baking sheet with parchment paper.
  2. Separate the eggs, placing the whites in one large bowl and the yolks in another.
  3. Add the softened cream cheese, shredded mozzarella, almond flour, baking powder, and salt to the egg yolks. Mix until smooth and well combined.
  4. Add the cream of tartar to the egg whites and beat with a hand mixer until stiff peaks form.
  5. Gently fold the egg white mixture into the yolk mixture in batches, being careful not to deflate the batter.
  6. Scoop the mixture into 6 equal mounds in the prepared pan or on the baking sheet, shaping them like rolls.
  7. Brush the tops lightly with melted butter.
  8. Bake for 20 to 25 minutes, or until puffed and golden brown on top.
  9. Let the rolls cool for a few minutes before serving.
  10. Enjoy warm or let cool completely and store in the refrigerator.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
