  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley, optional
  • 2 tablespoons olive oil, for cooking
  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 1 tablespoon butter or olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Mix chicken, egg, cheese, mayonnaise, flour, garlic powder, onion powder, salt, pepper, and parsley in a bowl.
  2. Let mixture rest for 5 minutes.
  3. Heat 1 tablespoon olive oil in a skillet over medium heat.
  4. Form chicken mixture into small patties and cook for 4-5 minutes per side until golden brown.
  5. Steam broccoli and cauliflower for 5-7 minutes until tender.
  6. Toss vegetables with butter or olive oil, salt, and pepper.
  7. Serve fritters warm with steamed vegetables.
