Cherry-filled chocolate truffles are a rich and indulgent no-bake dessert. These bite-sized treats combine smooth dark chocolate ganache with a sweet cherry center, coated in cocoa powder.

  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • ½ teaspoon vanilla extract
  • ½ cup cherry preserves or cherry filling
  • ¼ cup unsweetened cocoa powder (for coating)

Instructions

  1. Place chopped dark chocolate in a heatproof bowl.
  2. Heat heavy cream in a small saucepan over medium heat until just simmering.
  3. Pour hot cream over the chocolate and let sit for 2 minutes.
  4. Add butter and vanilla extract, then stir until smooth and glossy.
  5. Cover and refrigerate the ganache for 1–2 hours, until firm enough to scoop.
  6. Scoop a tablespoon of ganache, flatten slightly, and place a small amount of cherry filling in the center.
  7. Gently roll into a ball, sealing the cherry inside.
  8. Roll each truffle in cocoa powder until fully coated.
  9. Refrigerate for 20 minutes before serving.
