  • 2 tsp vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 1 tsp coconut oil (optional, for smoother drizzle)

Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving overhang for easy lifting.
  2. In a large bowl, mix oats, nuts, cinnamon, salt, and mini chocolate chips/dried fruit (if using).
  3. In a microwave-safe bowl (or small saucepan), warm peanut butter and honey for 30–45 seconds (or until pourable). Stir in vanilla.
  4. Pour wet mixture over the oat mixture and stir until everything is evenly coated.
  5. Press mixture firmly into the prepared pan (press hard so the bars hold together).
  6. Chill for 45–60 minutes until set.
  7. Melt chocolate chips (and coconut oil if using) in 20–30 second bursts, stirring until smooth. Drizzle over the bars.
  8. Chill 10–15 minutes to set the chocolate, then slice into bars.
