A low-carb, keto-friendly dish combining crispy cabbage rounds with seasoned ground beef and melted cheese.

  • 1 large head green cabbage, cut into 1-inch thick rounds (68 rounds)
  • 1 1/2 lb ground beef (80/20 or 85/15)
  • 1 small onion, finely chopped (or 1 tsp onion powder)
  • 2 cloves garlic, minced (or 1/2 tsp garlic powder)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning (or dried oregano)
  • 2 tbsp ketchup (optional for “burger” flavor)
  • 1 tbsp yellow mustard (optional)
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tbsp olive oil (for brushing cabbage)
  • 1 1/2 cups shredded cheese (mozzarella, provolone, or cheddar)
  • Chopped parsley, for garnish

Instructions

  1. Preheat oven to 425°F. Line a large baking sheet (or use a roasting pan) with parchment or foil.
  2. Slice cabbage into thick rounds. Place on the pan and brush tops with olive oil. Sprinkle lightly with salt and pepper.
  3. Roast cabbage rounds for 15 minutes to start crisping and softening.
  4. Meanwhile, mix ground beef with onion, garlic, salt, pepper, paprika, and Italian seasoning. Stir in ketchup, mustard, and Worcestershire if using.
  5. Pull the pan from the oven. Press the center of each cabbage round down slightly to create a “cup.”
  6. Divide beef mixture into 6–8 portions and mound each portion into the cabbage cups.
  7. Bake 18–22 minutes, until beef is cooked through (160°F).
  8. Sprinkle cheese on top and bake 2–4 minutes more, until melted and bubbly.
  9. Garnish with parsley and serve hot.

Notes

  • For crispier cabbage, roast longer before adding beef.
  • Adjust seasoning to taste.
  • Use any cheese you prefer.
