Instructions

  1. Mix wet: In a bowl, stir together cottage cheese, egg, sugar, and vanilla until combined.
  2. Add dry: Stir in flour, baking powder, and salt to form a soft dough. If it’s too sticky, add 1–2 tbsp flour until workable.
  3. Shape: Lightly flour your hands and counter. Pat dough into a 1-inch thick rectangle and cut into 1-inch cubes.
  4. Pan-fry (crispiest): Melt butter in a nonstick skillet over medium heat. Add cubes in a single layer and cook 2–3 minutes per side, turning gently, until golden and crisp all over (about 8–10 minutes total).

  6. Oven Option: Bake on a parchment-lined sheet at 425°F for 12–15 minutes, flipping halfway, until golden.
