  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F. Grease and line a 9×5-inch loaf pan.
  2. Combine chopped dates, boiling water, and baking soda in a bowl. Let sit for 10 minutes.
  3. In a large bowl, cream butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract.
  5. Stir in the softened date mixture.
  6. In a separate bowl, whisk together flour, baking powder, and salt.
  7. Gradually fold dry ingredients into the wet mixture until just combined.
  8. Gently fold in chopped walnuts.
  9. Pour batter into prepared loaf pan and sprinkle extra walnuts on top if desired.
  10. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
  11. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
