Juicy Chicken Souvlaki Recipe with 5-Star Flavor in 30 Minutes

  • 1 1/2 lbs boneless, skinless chicken breast (or thighs), cut into 1 1/2-inch chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow onion, cut into chunks
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 lbs Yukon gold (or baby) potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chopped romaine (or mixed greens)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Pinch of salt + pepper
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber (squeezed dry)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, finely grated
  • 1 tbsp chopped fresh dill (or 1 tsp dried)
  • 1/2 tsp salt
  • Black pepper, to taste

Instructions

  1. Marinate chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Toss with chicken. Marinate 15–30 minutes (or up to 8 hours).
  2. Roast potatoes: Preheat oven to 425°F. Toss potato wedges with olive oil, oregano, garlic powder, salt, and pepper. Roast 25–30 minutes, flipping halfway, until golden and crisp.
  3. Make tzatziki: Stir Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper. Chill until serving.
  4. Build skewers: Thread chicken, red pepper, and onion onto skewers.
  5. Cook skewers: Grill over medium-high heat 10–12 minutes, turning every few minutes, until charred and chicken reaches 165°F. (Or cook on a grill pan/skillet.)
  6. Quick salad: Toss romaine with olive oil, lemon juice, salt, and pepper.
  7. Serve: Plate skewers with roasted potatoes, salad, and a generous scoop of tzatziki.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • For extra flavor, add a pinch of cumin to the chicken marinade.
  • Use full-fat Greek yogurt for a creamier tzatziki.
