40-Minute Garlic Butter Salmon That Melts in Your Mouth

A delicious one-pan garlic butter salmon dinner with smashed potatoes and asparagus, perfect for a healthy weeknight meal.

  • 1 lb baby gold potatoes
  • 1 1/2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1 bunch asparagus, trimmed
  • 1 tsp olive oil
  • Pinch salt + pepper
  • 1 lb salmon filet, skin removed, cut into 1 1/2-inch chunks
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice (plus wedges for serving)
  • 1 tbsp chopped fresh dill (or 1 tsp dried)
  • 1 tbsp chopped fresh parsley or chives (optional)
  • Pinch red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F. Line a sheet pan with parchment (optional).
  2. Boil potatoes: Add baby potatoes to a pot, cover with water, and add a big pinch of salt. Boil 12–15 minutes until fork-tender. Drain and let steam-dry for 2 minutes.
  3. Smash + roast: Place potatoes on the sheet pan. Smash each one gently with the bottom of a glass. Drizzle with olive oil, then season with salt, pepper, and garlic powder. Roast 18 minutes.
  4. Add asparagus: Toss asparagus with 1 tsp olive oil, salt, and pepper. Add to the pan with potatoes and roast 10–12 minutes more, until potatoes are golden and asparagus is crisp-tender.
  5. Cook salmon: While veggies roast, pat salmon dry and season with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear salmon bites 2–3 minutes per side until browned and just cooked through. Transfer salmon to a plate.
  6. Make sauce: Reduce heat to medium. Add butter to the skillet. Once melted, stir in garlic and cook 30 seconds until fragrant. Stir in lemon juice, dill, parsley/chives, and red pepper flakes (if using).
  7. Finish: Return salmon to the skillet and gently toss in the lemon dill butter sauce for 30–60 seconds.
  8. Serve: Plate smashed potatoes and asparagus, then top with salmon bites and spoon extra sauce over everything. Serve with lemon wedges.

Notes

  • Use fresh dill for the best flavor.
  • Adjust red pepper flakes to your preferred spice level.
  • Ensure salmon is cooked to an internal temperature of 145°F.
