30-Minute Healthy Broccoli Pasta That Tastes Indulgent

A quick and healthy pasta dish featuring broccoli and Parmesan cheese.

Ingredients

  • 12 ounces medium shell pasta
  • 1 large head broccoli, cut into florets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons cream cheese or ricotta
  • 1 tablespoon lemon juice
  • 1/3 to 1/2 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package directions.
  2. In the last 3 to 4 minutes of cooking, add the broccoli florets to the same pot with the pasta.
  3. Reserve 1/2 cup of the pasta water, then drain the pasta and broccoli.
  4. Transfer about two-thirds of the broccoli to a blender or food processor.
  5. Add the olive oil, garlic, salt, black pepper, red pepper flakes if using, Parmesan cheese, cream cheese or ricotta, lemon juice, and 1/3 cup reserved pasta water.
  6. Blend until smooth and creamy, adding a little more pasta water if needed.
  7. Add the drained pasta and remaining broccoli back to the pot.
  8. Pour the broccoli sauce over the pasta and toss well until everything is evenly coated.
  9. Warm over low heat for 1 to 2 minutes, just until hot and creamy.
  10. Serve with extra Parmesan on top.

Notes

  • Adjust the amount of red pepper flakes for more or less heat.
  • Use reserved pasta water to thin the sauce if needed.
