Healthy Oreo Cheesecake Bites

Healthy Oreo Cheesecake Bites are a delicious, no-bake dessert with a cookies and cream flavor. These mini cheesecake bites are easy to make and perfect for a light treat.

  • 10 Oreo Thins, divided
  • 1 tablespoon melted butter
  • 8 ounces reduced-fat cream cheese, softened
  • 3/4 cup plain nonfat Greek yogurt
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup light whipped topping

Instructions

  1. Line a 12-cup muffin pan or mini cheesecake pan with paper liners.
  2. Crush 6 Oreo Thins into fine crumbs and mix with the melted butter.
  3. Spoon the crumb mixture into the bottoms of the liners and press down firmly to form the crust.
  4. In a medium bowl, beat the softened cream cheese until smooth.
  5. Add the Greek yogurt, maple syrup, and vanilla extract, then mix until creamy and fully combined.
  6. Crush the remaining 4 Oreo Thins and fold most of the crumbs into the cheesecake mixture, reserving a little for topping.
  7. Gently fold in the light whipped topping until the filling is light and fluffy.
  8. Spoon the filling over the crusts and smooth the tops.
  9. Sprinkle the reserved Oreo crumbs on top.
  10. Chill for at least 3 hours, or until firm. Serve cold.
