- 1 lb ground beef (80/20 works best)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder (optional)
- 4–6 low-carb tortillas (small/medium ‘carb balance’ style)
- 4–6 slices American cheese (or cheddar)
- 1/2 cup mayonnaise
- 2 tbsp sugar-free ketchup
- 1 tbsp yellow mustard
- 2 tbsp dill pickle relish (or finely chopped pickles)
- 1 tsp white vinegar (or pickle juice)
- 1/2 tsp paprika
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- Pinch of salt + pepper
- 1 1/2 cups shredded iceberg lettuce
- Dill pickle chips (the more, the better)
- Optional: diced onion
- Make the special sauce: Stir together mayo, sugar-free ketchup, mustard, relish, vinegar, paprika, onion powder, garlic powder, salt, and pepper. Set aside.
- Prep the beef: Divide ground beef into 4–6 balls (about 3–4 oz each). Season with salt, pepper, and garlic powder.
- Heat the pan: Warm a large cast iron or nonstick skillet over medium-high heat until hot.
- Smash onto the tortilla: Place a tortilla in the skillet. Set one beef ball in the center and smash it thin with a spatula (use parchment between spatula and beef). Press so the beef spreads close to the tortilla edges.
- Cook: Let cook 2–3 minutes until the beef is browned and crispy at the edges.
- Flip: Flip the whole thing so the tortilla hits the pan. Immediately add a slice of cheese on top of the beef and cook 1–2 minutes until the tortilla is lightly toasted and the cheese melts.
- Build: Remove from heat. Add shredded lettuce, pickle chips, and a generous drizzle of special sauce (plus onions if you like).
- Fold & serve: Fold like a taco and eat hot. Repeat with remaining tortillas and beef.
Notes
- Smash thin for maximum crisp.
- Keep lettuce and pickles cold and add after cooking.
- Store components separately up to 3 days; reheat patties/tortillas in a skillet for best crisp.
