A refreshing and easy-to-make Italian pasta salad perfect for summer gatherings or potlucks.

Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • ½ cup red onion, thinly sliced
  • ¾ cup mozzarella pearls or cubed mozzarella
  • ¾ cup sliced salami
  • ½ cup sliced Kalamata olives
  • ¼ cup fresh parsley or basil, chopped
  • ⅓ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Cook rotini pasta according to package directions until al dente. Drain and rinse with cold water.
  2. Add cooled pasta to a large bowl.
  3. Stir in cherry tomatoes, cucumber, red onion, mozzarella, salami, and olives.
  4. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and black pepper.
  5. Pour dressing over the pasta salad.
  6. Toss gently until everything is evenly coated.
  7. Sprinkle with fresh parsley or basil.
  8. Chill for at least 30 minutes before serving for best flavor.

Notes

  • For a vegetarian version, omit the salami.
  • Can be stored in the fridge for up to 3 days.
  • Add more vegetables if desired.
