Keto Big Mac Smash Burgers

A delicious keto-friendly twist on the classic Big Mac, using smash burgers wrapped in low-carb tortillas with a special homemade sauce.

Ingredients

  • 1 pound ground beef
  • 8 small low carb tortillas
  • 8 slices American cheese
  • 2 cups shredded iceberg lettuce
  • 24 dill pickle slices
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • For the sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sugar-free ketchup
  • 1 tablespoon yellow mustard
  • 2 tablespoons dill pickle relish
  • 1 teaspoon white vinegar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder

Instructions

  1. In a small bowl, stir together the mayonnaise, sugar-free ketchup, yellow mustard, dill pickle relish, white vinegar, paprika, and onion powder until smooth. Set aside.
  2. In another bowl, mix the ground beef with salt, black pepper, garlic powder, and onion powder. Divide the beef into 8 equal portions.
  3. Press one portion of beef into a very thin layer over each low carb tortilla, spreading it almost to the edges.
  4. Heat a large skillet or griddle over medium-high heat. Place each tortilla beef-side down onto the hot surface and cook for 2 to 3 minutes until the beef is browned and crispy around the edges.
  5. Flip each one over so the tortilla side is down. Top each burger with 1 slice of American cheese and cook for 1 more minute, until the cheese melts and the tortilla is lightly golden.
  6. Remove from the skillet and top with shredded lettuce, dill pickle slices, and a drizzle of the prepared sauce.
  7. Fold like a taco or serve open-faced and enjoy right away.
