Keto Crispy Reuben Roll-Ups

Crispy Keto Reuben Roll-Ups are a low-carb twist on the classic Reuben sandwich. These roll-ups feature melty Swiss cheese, savory corned beef, tangy sauerkraut, and a homemade keto Thousand Island dip.

  • 2 cups shredded Swiss cheese (or Swiss/Provolone blend)
  • 12 slices deli corned beef (or pastrami)
  • 3/4 cup sauerkraut, drained very well and patted dry
  • 1/2 cup keto Thousand Island dip
  • 1 tbsp chopped fresh parsley (optional, for garnish)
  • For the Keto Thousand Island Dip:
  • 1/2 cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 2 tbsp dill pickle relish (or finely chopped pickles)
  • 1 tsp white vinegar (or pickle juice)
  • 1/2 tsp paprika
  • Salt & pepper, to taste

Instructions

  1. Make the dip: Stir together mayo, sugar-free ketchup, relish, vinegar, paprika, salt, and pepper. Chill while you make the roll-ups.
  2. Prep sauerkraut: Drain sauerkraut and squeeze out as much liquid as possible.
  3. Make crispy cheese “wraps”: Heat a nonstick skillet over medium heat. Sprinkle about 1/4 cup shredded Swiss into a 4–5 inch circle. Cook 1–2 minutes until melted and the edges look golden and lacy.
  4. Fill: While the cheese is still pliable, add 1 slice corned beef, a small spoonful of sauerkraut, and a drizzle of Thousand Island.
  5. Roll: Carefully roll up into a tight log. Place seam-side down in the skillet and cook 30–60 seconds to seal and crisp.
  6. Repeat: Make remaining roll-ups the same way.
  7. Serve: Sprinkle with parsley and serve warm with extra keto Thousand Island for dipping.

Notes

  • Keep cheese circles small and don’t overfill—drier sauerkraut = crispier roll-ups.
  • Refrigerate up to 3 days; re-crisp in a skillet or air fryer at 375°F for 3–5 minutes.
