Ingredients

  • 1 1/2 cups fresh blueberries (dry well)
  • 1 cup plain Greek yogurt (or vanilla Greek yogurt)
  • 1 scoop (about 1/3 cup) vanilla protein powder
  • 1 tbsp lemon zest (plus extra for topping)
  • 12 tbsp fresh lemon juice
  • 12 tbsp honey or maple syrup (optional, to sweeten)
  • Pinch of salt
  • 23 tbsp finely crushed graham-style crumbs or toasted shredded coconut (optional coating)

Instructions

  1. Line a baking sheet with parchment paper. Make sure the blueberries are completely dry.
  2. In a bowl, whisk together Greek yogurt, protein powder, lemon zest, lemon juice, honey (if using), and a pinch of salt until smooth and thick.
  3. Add blueberries and gently stir until each berry is fully coated.
  4. Use a spoon or small cookie scoop to drop coated blueberries onto the parchment in small clusters or as individual berries.
  5. Sprinkle with extra lemon zest and optional crumbs or coconut for crunch.
  6. Freeze for 30–45 minutes until firm. Store in an airtight container in the freezer.
