20-Minute Pesto Mozzarella Sandwich That Melts Perfection

A delicious and easy-to-make pesto mozzarella sandwich with fresh tomatoes and melted cheese.

Ingredients

  • 4 slices sourdough bread
  • 4 tablespoons basil pesto
  • 8 ounces fresh mozzarella, sliced
  • 1 large tomato, sliced
  • 1 tablespoon olive oil or softened butter
  • 1 tablespoon grated Parmesan cheese, optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Spread 1 tablespoon of pesto on one side of each slice of bread.
  2. Layer the mozzarella slices and tomato slices on 2 pieces of bread.
  3. Sprinkle with salt, black pepper, and Parmesan cheese if using.
  4. Top with the remaining bread slices, pesto side down.
  5. Lightly brush the outside of each sandwich with olive oil or softened butter.
  6. Heat a skillet or grill pan over medium heat.
  7. Cook the sandwiches for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden and crisp and the mozzarella is melted.
  8. Remove from the pan, let rest for 1 minute, then slice and serve warm.

  • Use fresh mozzarella for the best texture.
  • Adjust salt and pepper to taste.
  • Serve immediately for the best flavor.
