Irresistible 30-Minute Sausage Potato Egg Skillet Recipe

A hearty one-pan breakfast with smoked sausage, potatoes, and eggs cooked together in a cast-iron skillet.

Ingredients

  • 12 oz smoked sausage, sliced
  • 1 lb baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 tablespoon olive oil
  • 4 eggs
  • Salt and black pepper, to taste
  • Fresh chives, chopped (for garnish)

Instructions

  1. Heat olive oil in a large cast-iron skillet over medium heat.
  2. Add the halved potatoes and cook for 10–12 minutes, stirring occasionally, until golden and tender.
  3. Add the sliced sausage and bell peppers to the skillet. Cook for 5–7 minutes until the sausage is browned and the peppers are softened.
  4. Season with salt and black pepper.
  5. Create small wells in the skillet and crack the eggs directly into them.
  6. Cover the skillet and cook for 4–6 minutes, until egg whites are set and yolks are cooked to your liking.
  7. Remove from heat and garnish with fresh chopped chives before serving.

Notes

  • Use pre-cooked sausage for quicker cooking.
  • Adjust egg cooking time based on yolk preference.
  • Serve immediately for best texture.
