  • 1/3 cup granulated sugar substitute (monk fruit or erythritol)
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 2 tbsp cornstarch (or arrowroot powder)
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar substitute (monk fruit or erythritol)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk (or unsweetened almond milk)
  • 1/2 cup (1 stick) unsalted butter, melted

Instructions

  1. Preheat oven to 350°F. Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, toss peaches with sugar substitute, lemon juice, vanilla, cinnamon, nutmeg (if using), and cornstarch until well coated. Pour peach mixture into the prepared baking dish.
  3. In another bowl, whisk together flour, sugar substitute, baking powder, and salt.
  4. Stir in milk until just combined (don’t overmix).
  5. Pour melted butter evenly over the peaches.
  6. Spoon the batter over the peaches (it won’t fully cover—this is normal and bakes up beautifully).
  7. Bake for 40–45 minutes, or until the top is golden brown and the filling is bubbly.
  8. Cool 10–15 minutes before serving so the filling thickens.
