  • 1 cup unsweetened almond milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegan butter or coconut oil, for cooking
  • Maple syrup, for serving
  • Powdered sugar, for serving
  • Fresh raspberries, for serving
  • Fresh blackberries, for serving
  • Fresh blueberries, for serving
  • Vegan whipped topping, optional

Instructions

  1. In a shallow bowl, whisk together the almond milk, flour, cornstarch, maple syrup, vanilla extract, cinnamon, and salt until smooth.
  2. Heat a large nonstick skillet or griddle over medium heat and lightly grease with vegan butter or coconut oil.
  3. Dip each slice of bread into the mixture, coating both sides well but not soaking too long.
  4. Place the coated bread on the hot skillet and cook for 3 to 4 minutes per side, until golden brown and lightly crisp on the outside.
  5. Repeat with the remaining slices, adding more vegan butter or oil as needed.
