  • 1 large sweet onion (or yellow onion), sliced into 1/4-inch rings
  • 2 cups shredded mozzarella cheese (low-moisture works best)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray (or a light brush of oil)
  • 1/2 cup mayonnaise (or Greek yogurt for extra protein)
  • 1 tbsp sour cream (optional)
  • 1 tsp Dijon mustard
  • 1 tsp pickle juice or lemon juice
  • 1/2 tsp paprika
  • Salt & pepper, to taste
  • Chopped chives, for topping

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. Separate onion slices into rings and pat dry with paper towels.
  3. In a bowl, mix mozzarella, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Spoon small “piles” of the cheese mixture onto the parchment (about 1–2 tbsp each), leaving space between.
  5. Dip each onion ring lightly in the beaten egg, then place on top of a cheese pile.
  6. Sprinkle a little more cheese mixture on top of each ring and press gently to help it stick.
  7. Bake 12–16 minutes until deep golden and crisp around the edges.
  8. Let cool 3–5 minutes (they crisp up as they cool), then lift carefully with a spatula.
  9. Mix dip ingredients and serve alongside the onion rings.

Notes

  • For extra crispiness, broil for 1–2 minutes at the end.
  • Use a non-stick mat if parchment paper isn’t available.
  • Store leftovers in an airtight container for up to 2 days (reheat in oven or air fryer).
