  • 2 eggs
  • 3/4 cup plain yogurt (Greek or regular)
  • 1/2 cup granulated sugar
  • 1/3 cup neutral oil (vegetable/canola) or melted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled, diced apples (about 2 medium apples)

Instructions

  1. Preheat oven to 375°F. Line a 12-cup muffin tin with liners (or grease well).
  2. In a large bowl, whisk together flour, baking powder, cinnamon, baking soda, and salt.
  3. In another bowl, whisk eggs, yogurt, sugar, oil (or melted butter), and vanilla until smooth.
  4. Add wet ingredients to dry ingredients and stir just until combined (don’t overmix).
  5. Fold in the diced apples.
  6. Divide batter evenly into the muffin cups (about 3/4 full).
  7. Bake 18–22 minutes, or until a toothpick comes out clean.
  8. Cool 5 minutes in the pan, then transfer to a rack to cool.
