  • 1 large ripe avocado, diced
  • 1 cup cucumber, sliced
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Add the drained butter beans to a large mixing bowl.
  2. Add the diced avocado, sliced cucumber, red bell pepper, red onion, and fresh herbs.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, salt, black pepper, and red pepper flakes.
  4. Pour the dressing over the butter bean mixture.
  5. Gently toss until the beans and vegetables are coated, letting some of the avocado lightly mash into the dressing for a creamy texture.
