  • 1 cup whole wheat flour (or all-purpose flour)
  • 1/2 cup light brown sugar (or coconut sugar)
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup unsalted butter, melted (or melted coconut oil)
  • 1 tsp vanilla extract
  • 3 cups apples, peeled and diced (about 3 medium)
  • 2 Tbsp lemon juice
  • 2 Tbsp maple syrup (or honey)
  • 1 tsp ground cinnamon
  • 1 Tbsp cornstarch (or arrowroot powder)
  • 2 Tbsp water

Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper.
  2. In a large bowl, mix oats, flour, brown sugar, cinnamon, salt, and baking powder. Stir in melted butter and vanilla until the mixture looks like moist crumbs.
  3. Press about 2/3 of the oat mixture firmly into the bottom of the pan to form the crust.
  4. Make the filling: Toss diced apples with lemon juice, maple syrup, and cinnamon. In a small cup, whisk cornstarch + water until smooth, then stir into the apples.
  5. Spread apple filling evenly over the crust.
  6. Sprinkle remaining 1/3 oat mixture over the top and gently press it down slightly.
  7. Bake 30–38 minutes until golden brown and the apples are bubbly.
  8. Cool completely (at least 1 hour) before slicing into squares for clean cuts.

Notes

  • Store in an airtight container for up to 5 days.
  • For a crispier texture, bake for the full 38 minutes.
  • Substitute apples with pears for a variation.
