Irresistible 30-Minute Beef Quesadillas That Wow Every Time

Cheesy ground beef quesadillas with Mexican flavors, perfect for a quick weeknight dinner.

Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 2 cups shredded Mexican-blend cheese (or cheddar & mozzarella)
  • 68 large flour tortillas

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and cook until soft and translucent.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Season with chili powder, paprika, cumin, garlic powder, salt, and pepper. Stir well.
  5. Remove beef mixture from heat.
  6. Lay tortillas flat and sprinkle cheese over one half of each tortilla.
  7. Spoon seasoned beef evenly over the cheese, then top with more cheese.
  8. Fold tortillas in half and cook in a clean skillet over medium heat until golden and crispy on both sides and cheese is melted.
  9. Remove, slice, and serve warm.

Notes

  • Use freshly shredded cheese for better melting.
  • Adjust spice levels to your preference.
  • Serve with sour cream, salsa, or guacamole.
