Creamy Pasta Salad

A refreshing cold pasta salad perfect for summer gatherings, BBQs, or potlucks. This creamy pasta salad combines tri-color rotini with fresh vegetables in a tangy dressing.

Ingredients

  • 12 oz tri-color rotini pasta
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • 1 cup cucumber, diced
  • 1 cup grape tomatoes, halved
  • ½ cup sliced black olives
  • ½ cup shredded carrots
  • ¼ cup chopped green onions
  • 2 tbsp fresh dill, chopped (optional)

Instructions

  1. Cook the rotini according to package directions until al dente.
  2. Drain and rinse under cold water until completely cooled.
  3. In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, garlic powder, onion powder, salt, and pepper.
  4. Add the cooled pasta, cucumbers, tomatoes, black olives, shredded carrots, green onions, and dill.
  5. Toss until everything is evenly coated.
  6. Refrigerate for at least 1 hour before serving for the best flavor.
  7. Garnish with extra green onions before serving if desired.

  • For best results, chill for at least 1 hour before serving.
  • You can substitute Greek yogurt for sour cream if preferred.
