  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces mushrooms, sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Pat the shrimp dry and season with paprika, Italian seasoning, salt, and black pepper.
  2. Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter.
  3. Add the shrimp and cook for 1 to 2 minutes per side, until pink and just cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining butter, mushrooms, and asparagus. Cook for 4 to 5 minutes, stirring occasionally, until the mushrooms are tender and the asparagus is bright green and crisp-tender.
  5. Add the garlic and red pepper flakes, if using, and cook for 30 seconds until fragrant.
  6. Return the shrimp to the skillet and toss everything together.
  7. Drizzle with lemon juice and sprinkle with fresh parsley.
  8. Serve hot on its own or over rice, pasta, or cauliflower rice.

Notes

  • For a spicier version, increase the red pepper flakes.
  • Use fresh garlic for the best flavor.
  • Do not overcook the shrimp to keep them tender.
