Ground Beef and Broccoli Stir-Fry

A quick and flavorful ground beef and broccoli stir-fry with a savory sauce, perfect for a weeknight dinner.

  • 1 tablespoon vegetable oil
  • 3 cups broccoli florets
  • 1 large red bell pepper, thinly sliced
  • ½ medium yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • ¼ teaspoon red pepper flakes, optional
  • ⅓ cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • ½ cup water
  • 1 teaspoon chili garlic sauce, optional
  • 2 cups cooked white or brown rice
  • Sesame seeds, optional
  • Sliced green onions, optional

Instructions

  1. Whisk together soy sauce, brown sugar, rice vinegar, sesame oil, cornstarch, water, and chili garlic sauce in a small bowl. Set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add ground beef and cook for 6–8 minutes, breaking it into crumbles, until browned.
  4. Drain excess grease.
  5. Add onion and red bell pepper. Cook for 3–4 minutes, stirring frequently.
  6. Add broccoli and 2 tablespoons of water. Cover and cook for 3–4 minutes until broccoli is crisp-tender.
  7. Stir in garlic, ginger, and red pepper flakes. Cook for 30 seconds.
  8. Whisk the sauce again, then pour it into the skillet.
  9. Simmer for 2–3 minutes, until the sauce thickens and coats everything evenly.
  10. Divide rice among bowls, top with stir-fry, and garnish with sesame seeds and green onions if desired.

Notes

  • Use low-sodium soy sauce to control saltiness.
  • Adjust red pepper flakes and chili garlic sauce for preferred spice level.
  • Store leftovers in an airtight container for up to 3 days.
