  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked brown rice or white rice
  • 1 15-ounce can black beans, drained and rinsed
  • 1 1/2 cups corn kernels
  • 1 cup shredded Mexican blend cheese
  • 1 cup pico de gallo
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/2 cup chopped fresh cilantro
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon salt

Instructions

  1. Toss chicken with olive oil and spices until coated.
  2. Cook chicken in a skillet for 6-8 minutes until done.
  3. Mash avocados with lime juice, red onion, cilantro, and salt.
  4. Warm black beans and corn.
  5. Divide rice among bowls.
  6. Top with chicken, beans, corn, pico de gallo, cheese, guacamole, and sour cream.
  7. Sprinkle with cilantro and serve.
