  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup whole wheat flour (or all-purpose flour)
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup finely grated carrots (packed)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup honey (or pure maple syrup)
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 24 tbsp milk (as needed)
  • 1/3 cup raisins (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the oats, flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. Stir in the grated carrots.
  4. Add applesauce, honey, egg, and vanilla. Mix until combined. If the dough seems dry, add milk 1 tablespoon at a time until the dough is thick but scoopable.
  5. Fold in raisins and/or nuts if using.
  6. Scoop dough into 12 mounds (about 2 tablespoons each) onto the baking sheet. Gently flatten slightly.
  7. Bake 10–12 minutes until set and lightly golden around the edges.
  8. Cool on the pan for 10 minutes, then transfer to a rack to cool completely.

Notes

  • Store in an airtight container for up to 3 days.
  • For a vegan option, replace the egg with a flax egg and use maple syrup.
  • Adjust sweetness by reducing or increasing honey.
