- 1 1/2 cups old-fashioned rolled oats
- 3/4 cup whole wheat flour (or all-purpose flour)
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup finely grated carrots (packed)
- 1/2 cup unsweetened applesauce
- 1/3 cup honey (or pure maple syrup)
- 1 large egg
- 1 1/2 tsp vanilla extract
- 2–4 tbsp milk (as needed)
- 1/3 cup raisins (optional)
- 1/4 cup chopped walnuts or pecans (optional)
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the oats, flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- Stir in the grated carrots.
- Add applesauce, honey, egg, and vanilla. Mix until combined. If the dough seems dry, add milk 1 tablespoon at a time until the dough is thick but scoopable.
- Fold in raisins and/or nuts if using.
- Scoop dough into 12 mounds (about 2 tablespoons each) onto the baking sheet. Gently flatten slightly.
- Bake 10–12 minutes until set and lightly golden around the edges.
- Cool on the pan for 10 minutes, then transfer to a rack to cool completely.
Notes
- Store in an airtight container for up to 3 days.
- For a vegan option, replace the egg with a flax egg and use maple syrup.
- Adjust sweetness by reducing or increasing honey.
