Healthy fried egg breakfast bowl

A nutritious breakfast bowl featuring fried eggs with fresh spinach and seasonal fruit.

Ingredients

  • 2 large eggs
  • 1 teaspoon olive oil or butter
  • 1 cup fresh spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup fresh strawberries, sliced
  • 1 kiwi, peeled and sliced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon dried parsley or Italian seasoning
  • Pinch of crushed red pepper flakes (optional)

Instructions

  1. Heat olive oil or butter in a nonstick skillet over medium heat.
  2. Add the fresh spinach and cook for 1–2 minutes, stirring gently, until wilted. Transfer the spinach to a bowl or plate.
  3. In the same skillet, crack in the eggs and cook sunny-side up for 3–4 minutes, or until the whites are set and the yolks are still soft.
  4. Season the eggs with salt, black pepper, dried parsley or Italian seasoning, and crushed red pepper flakes if using.
  5. Arrange the cooked spinach, fried eggs, halved cherry tomatoes, sliced strawberries, and kiwi slices in a bowl.
  6. Serve immediately while the eggs are warm and the fruit is fresh.

Notes

  • Use ripe but firm fruit for best texture.
  • Adjust seasoning to taste.
  • For crispier eggs, cook an additional minute.
