Grilled Chicken Egg Salad

A healthy and protein-packed grilled chicken egg salad with fresh vegetables.

Ingredients

  • 2 boneless skinless chicken breasts, sliced into strips
  • 2 large eggs
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sweet corn kernels
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Season the chicken strips with garlic powder, salt, black pepper, and paprika.
  2. Heat olive oil in a skillet over medium heat.
  3. Cook the chicken strips for 5–6 minutes per side, or until golden and cooked through.
  4. Bring a small pot of water to a boil and cook the eggs for 7–9 minutes, then cool, peel, and slice into wedges.
  5. Steam or blanch the broccoli florets for 2–3 minutes until bright green and crisp-tender.
  6. Arrange the grilled chicken, broccoli, cherry tomatoes, corn, and egg wedges in a serving bowl.
  7. Drizzle with lemon juice and honey or Dijon mustard if using.
  8. Sprinkle with extra black pepper and serve immediately.
