A quick and nutritious high-protein breakfast bowl featuring soft-boiled eggs, cottage cheese, and fresh blueberries for a balanced start to your day.

Ingredients

  • 3 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup fresh blueberries
  • 1 teaspoon honey
  • Pinch of red pepper flakes
  • Pinch of black pepper

Instructions

  1. Bring a small pot of water to a gentle boil.
  2. Carefully lower the eggs into the water and cook for 7 to 8 minutes for soft-boiled centers.
  3. Transfer the eggs to a bowl of ice water and let them cool for a few minutes.
  4. Peel the eggs and slice them in half.
  5. Spoon the cottage cheese into a bowl.
  6. Add the blueberries to one side of the bowl.
  7. Arrange the soft-boiled egg halves in the bowl.
  8. Drizzle the cottage cheese with honey.
  9. Sprinkle the eggs and cottage cheese lightly with red pepper flakes and black pepper.
  10. Serve immediately.
