A high-protein chicken ranch quesadilla packed with flavor and nutrients, perfect for a quick and healthy meal.

Ingredients

  • 2 large low-carb or flour tortillas
  • 1½ cups cooked shredded chicken breast
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup ranch dressing
  • 2 tbsp Greek yogurt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried parsley
  • Cooking spray or butter for the skillet

Instructions

  1. In a bowl, mix shredded chicken with ranch dressing, Greek yogurt, garlic powder, onion powder, and dried parsley until well coated.
  2. Heat a nonstick skillet over medium heat and lightly coat with cooking spray or butter.
  3. Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella evenly over the surface.
  4. Spread the chicken ranch mixture evenly over the cheese.
  5. Top with remaining cheese and place the second tortilla on top.
  6. Cook for 3–4 minutes per side, pressing gently, until tortillas are golden brown and cheese is fully melted.
  7. Remove from skillet, slice into wedges, and serve hot.

Notes

  • Use rotisserie chicken for quicker prep.
  • For extra crispiness, lightly butter the tortillas before cooking.
  • Adjust seasoning to taste.
