  • 1 lb baby potatoes, halved
  • 2 cups green beans, trimmed
  • 3 tablespoons olive oil, divided
  • ⅓ cup honey
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat oven to 400°F.
  2. Toss potatoes with 1½ tablespoons olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
  3. Season chicken with paprika, salt, and black pepper.
  4. Heat remaining olive oil in a skillet over medium heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove from skillet.
  5. In the same skillet, add garlic, honey, and soy sauce. Simmer 2–3 minutes until slightly thickened.
  6. Return chicken to skillet and spoon sauce over the top until glossy and coated.
  7. In a separate pan, sauté green beans with butter over medium heat for 4–5 minutes until tender and shiny.
  8. Serve chicken with roasted potatoes and green beans. Garnish with parsley if desired.
