    • 2 white fish fillets (cod or tilapia)
    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon minced garlic
    • 1 teaspoon dried parsley
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Rice:
    • 1 cup cooked white rice
  • For the Bowl:
    • 1 cup shelled edamame, cooked
    • 1 avocado, sliced
    • 1 small handful lettuce or mixed greens
    • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F.
  2. Place the fish fillets in a baking dish.
  3. In a small bowl, whisk together the olive oil, lemon juice, garlic, parsley, oregano, salt, and black pepper.
  4. Spoon the lemon herb mixture over the fish fillets.
  5. Bake for 12 to 15 minutes, or until the fish is flaky and cooked through.
  6. Warm the cooked white rice and divide it between serving bowls.
  7. Add the cooked edamame, sliced avocado, and greens to the bowls.
  8. Place the baked fish fillets over the rice.
  9. Garnish with lemon slices and serve warm.
