  • lbs boneless, skinless chicken breast, cut into chunks
  • 1 lb baby potatoes, halved
  • 2 cups carrots, sliced
  • 2 cups broccoli florets
  • 1 small onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat oven to 425°F.
  2. Add chicken, potatoes, carrots, broccoli, and onion to a large bowl.
  3. Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, pepper, and Italian seasoning. Toss until evenly coated.
  4. Spread everything evenly on a large baking sheet or roasting pan.
  5. Roast for 30–35 minutes, stirring halfway through, until chicken is cooked through and vegetables are tender.
  6. Remove from oven and let cool slightly before dividing into meal prep containers.
