Peanut Butter Baked Oatmeal Bars are a healthy and easy breakfast option. They combine oats, peanut butter, and dark chocolate for a delicious and nutritious start to your day.

  • 1 ripe banana, mashed
  • 1/2 cup creamy peanut butter, plus more for topping
  • 1/4 cup maple syrup
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chunks
  • Flaky sea salt, for topping
  • Fresh strawberries, for serving
  • Fresh blueberries, for serving

Instructions

  1. Preheat the oven to 350°F and lightly grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a large bowl, mash the banana until smooth.
  3. Add the peanut butter, maple syrup, milk, egg, and vanilla extract. Stir until well combined.
  4. Stir in the rolled oats, baking powder, cinnamon, and salt.
  5. Fold in the dark chocolate chunks.
  6. Spread the oatmeal mixture evenly into the prepared baking dish.
  7. Bake for 28–32 minutes, or until the edges are golden and the center is set.
  8. Let the baked oatmeal cool for 10 minutes before slicing into bars.
  9. Top each bar with a spoonful of creamy peanut butter and a sprinkle of flaky sea salt.
  10. Serve with fresh strawberries and blueberries.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For a vegan version, use a flax egg and plant-based milk.
