Scale
  • 1 lb large shrimp, peeled and deveined
  • 2 cups cooked jasmine rice
  • 1 tablespoon olive oil
  • 1/3 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 1 cup shelled edamame, cooked
  • 1 medium cucumber, thinly sliced
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 teaspoon black pepper
  • Salt, to taste

Instructions

  1. Pat the shrimp dry and season lightly with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes per side, or until pink and opaque.

  4. Divide the warm jasmine rice between bowls.
  5. Arrange the cooked edamame and thinly sliced cucumber alongside the rice.
  6. Spoon the sweet chili shrimp and extra sauce over the rice.
  7. Top with sliced green onions and chopped fresh cilantro. Serve immediately.

Notes

  • For extra heat, add a pinch of red pepper flakes.
  • Use brown rice or quinoa for a healthier alternative.
  • Leftovers can be stored in the refrigerator for up to 2 days.
