A hearty and nutritious breakfast bowl featuring roasted sweet potatoes, seasoned ground beef, avocado, and eggs.

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 lb ground beef
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • 4 large eggs
  • 1 avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F. Toss sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper.
  2. Spread sweet potatoes on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.
  3. While sweet potatoes cook, heat a skillet over medium heat. Add ground beef and cook until browned.
  4. Season beef with cumin, chili powder, salt, and pepper. Stir well and remove from heat.
  5. In a separate skillet, cook eggs to your liking (sunny-side up or over-easy works best).
  6. Assemble bowls by adding roasted sweet potatoes, ground beef, avocado slices, and a cooked egg on top.
  7. Garnish with fresh cilantro and crushed red pepper flakes if desired. Serve warm.

  • Adjust spices to taste.
  • For a spicier version, add more chili powder or red pepper flakes.
